Speck is a type of cured prosciutto, one of Italy's most famous meats. While similar in texture to other meats made from the hind leg of pigs such as Jamon Serrano and Prosciutto di Parma, speck is smoked where the others are salted and aged, making them dry-cured hams. Speck Alto Adige Prosciutto is covered with a spice mixture of garlic, salt, and juniper berries, and then smoked before aging for six months.
Enjoy thinly sliced speck prosciutto on sandwiches, pizza, or paninis. Toss in a pasta or rice dish to add a smoky flavor. Or place this lightly smoked ham on a charcuterie board with nutty Gouda cheese, sharp Parmigiano Reggiano, pickled vegetables, and a dash of salt and pepper.
