The pasta-makers at Granoro Pasta come from a long line of Italian pasta specialists. While Granoro is known for its durum wheat pasta from the breadbasket of Puglia, they now also produce a line of gluten-free pasta made from a mix of quinoa flour, white and yellow corn flour, and rice flour. Quinoa has been added to balance the intake of fibre, mineral salts and protein, which are lacking in rice and corn. They found that this carefully designed flour mixture is closest to what durum wheat pasta looks like and tastes like.
