Sanniti Dry-Cured Olives are Mediterranean olives that have been preserved in order to subdue some of the fruit’s more bitter flavors. To accomplish a more mellow, tangy flavor, the olives are rubbed with salt and air-dried. Next, they are soaked in olive oil to remove excess salt and to soften. There are several ways to cure olives, but Sanniti Dry-Cured Olives have the most pronounced flavor. These Spanish olives also have a signature shriveled texture that makes them easy to identify.
