A traditional Italian vinegar, vincotto is translated as 'cooked wine' because it originates from adding heat to pulped grape must. The cooked grape mixture is then reduced to one-fifth of the original volume and left to age in oak barrels for up to four years. In the third year of aging, figs and wine vinegar are added to the grape mixture, making Vincotto Originale Fig Vinegar. The vinegar is both sweet and sour and is excellent drizzled over meats and soups. It will also be ideal for pairing with dessert cheeses and fruits. Vincotto Originale is alcohol-free and has no colorings or preservatives.
