While the time-honored Gran Biscotto recipe has been the same for over 30 years, Rovagnati is constantly in search of only the best of the best pork meat cuts. That is why each pork leg is hand-selected and hand-boned. They are then seasoned with a special spice blend that is massaged into the meat for 72 hours before being slowly steam-cooked for 12 hours. This careful, methodical approach is what gives this prosciutto cotto its signature flavor and aroma.
