Similar in shape to a casserole dish, terracotta cazuelas are traditional low-fired clay cookware from Spain. They are wide and flat and glazed on the inside to retain moisture and cooking liquids. Terracotta cookware holds heat well, allowing food to cook gently and evenly. It also retains the heat when removed from the stove, allowing cooking to continue at the table. Cazuelas can be used as an oven casserole, as a frying skillet, or even a replacement pan for paella. These pans are ideal serving dishes for olives, tapas and other Mediterranean pincho, plus sautéing, frying, and baking Spanish and Latin American stews.
