1 baguette, sliced into thin rounds or little bruschettas.

8 oz (225g) ricotta cheese

2-3 oz (60-85g) caviar

parsley or chives, finely chopped, for garnish

Olive oil, for brushing

Salt and pepper, to taste
Directions
Brush each baguette slice lightly with olive oil and sprinkle with a pinch of salt and pepper.
In a small bowl, mix the ricotta cheese until smooth. Season with salt and pepper to taste.
Spread a thin layer of the mascarpone cheese or ricotta cheese onto each slice.
Spoon a small amount of caviar onto the center of each bruschetta, on top of the cheese layer
Garnish the bruschetta with freshly chopped parsley or chives for a pop of color and added flavor
