Ingredients
- 500 ml water

150–200 g sugar (adjust to taste)
- 250 ml freshly squeezed lemon juice (about 4–5 lemons)
- 1 tbsp lemon zest (optional, for extra zing)
- Fresh mint (optional, for garnish)
Directions
Make the Syrup
In a saucepan, combine the water and sugar. Heat gently until the sugar dissolves completely. Do not boil. Remove from heat and let cool to room temperature.
Add Lemon Juice
Once cooled, stir in the freshly squeezed lemon juice and zest (if using). Mix well.
Freeze
Pour the mixture into a shallow metal or glass dish. Place in the freezer.
Scrape to Crystallize
After about 30–45 minutes, once the edges start to freeze, use a fork to scrape the mixture. Repeat this every 30 minutes for about 3–4 hours, until you have a fluffy, icy texture.
Serve
