Ingredients
-
400g (14 oz) fresh or frozen tortellini (preferably cheese-filled)
-
200ml (7 oz) heavy cream
50g (1.5 oz) unsalted butter
-
100g (3.5 oz) parmesan cheese, grated
-
1 small clove of garlic, finely chopped (optional)
-
Salt and black pepper, to taste
-
Freshly grated nutmeg (optional, for extra flavor)
-
A handful of fresh parsley or basil, chopped (for garnish)
Directions
Cook the Tortellini
In a large pot, bring salted water to a boil. Add the tortellini and cook according to the package instructions (usually about 3-4 minutes for fresh tortellini or 8-10 minutes for frozen).
Once cooked, reserve about 1/2 cup of pasta water and drain the tortellini.
Prepare the Cream Sauce
In a large skillet or pan, melt the butter over medium heat.
If you're using garlic, add the chopped garlic and sauté for 1 minute until fragrant, but don’t let it brown. (Skip if you prefer a creamier taste.)
Add the heavy cream to the pan, and bring it to a gentle simmer. Stir occasionally.
Mix Tortellini and Sauce
Once the cream is simmering, add the cooked tortellini to the pan. Stir gently to coat the pasta in the sauce.
Gradually add the grated parmesan cheese, stirring constantly until the cheese melts and the sauce becomes smooth and creamy.
If the sauce is too thick, add a little of the reserved pasta water to loosen it up. Season with salt and pepper to taste.
Optional: Add a pinch of freshly grated nutmeg for an extra aromatic flavor.
Serve
Divide the tortellini into serving plates.
Garnish with fresh parsley or basil for a pop of color and flavor.
Serve hot with a sprinkle of extra parmesan cheese on top if you like.
