- 6 pcs of chicken - drumsticks and thighs suggested

- Olive oil
- Salt & pepper
Instructions:
Place herbs, garlic, and zest from 1 lemon, salt & pepper into a food processor. Process to a fine chop and then add juice from lemon, dijon mustard, and olive oil until consistency is a thick paste.
Rub mixture all over chicken and let sit. The longer it sits the better!
Place chicken on grill and serve once cooked!
Grilled Sicilian Sirloin Steak

This grilled steak recipe mixes classic Sicilian flavors such as red wine vinegar, oregano, basil, and garlic to create a delicious, savory marinade. Ingredients:
- 6 sirloin steaks (about 3 3/4 lbs total)
- 1 1/2 cups dry bread crumbs
- 1/2 cup fresh grated parmigiano-reggiano cheese
- 1 cup extra virgin olive oil
- 1/2 cup red wine vinegar
- 2 tbsp chopped fresh basil
- 2 garlic cloves, finely chopped
- 1 Tbsp dried oregano
- Ground black pepper
- Salt to taste
Instructions:
Mix olive oil, vinegar, garlic, basil, & pepper together in a bowl. Cover sirloin steaks evenly on all sides and let marinade in the refrigerator for 12 hours. Remove steaks from fridge at least 15 minutes before grilling.
Mix breadcrumbs, cheese, and oregano. Dredge steaks in mixture, coating steaks thoroughly. Salt steak to taste.
Place steaks on grill and cook to desired wellness!
Prosciutto Wrapped Chicken Stuffed with Fontina Cheese

- 4 chicken breasts
- 1/4 lb (4oz) of fontina cheese, sliced into 8 even pieces
- 4 slices of prosciutto
- Basil leaves

Instructions:
Using a sharp knife, cut each chicken horizontally through the side being careful not to cut all the way through. Incision should be like creating a pocket or opening a book.
Season chicken breasts with salt and pepper all over including the inside pocket. Then place 2 slices of fontina and basil inside the pocket and fold closed.
Wrap a slice of prosciutto and the entire breast and brush each side lightly with olive oil.
Place chicken on grill and serve when cook entirely through!
