RougiƩ raises Moulard ducks from when they are chicks, beginning with free-range feeding for the first 12 weeks of life. After that, the process of gavage begins, which is the overfeeding of ducks; at RougiƩ, this means two hand-fed meals per day by trained farmers. They are fed locally grown corn that contains zero antibiotics or hormones, making for a natural and tasty end result. This fattening process lasts for between 10 and 12 days.
