Ragusano is a DOP Sicilian cheese that gets its name from Ragusa, located at the southern tip of the Italian island. The cow’s milk for this cheese comes from cows of the famed Iblei Mountains. The resulting cheese is a type of caciocavallo with a stringy texture and a slightly spicy flavor. This stretched curd cheese's name means "cheese on horseback" because it was traditionally made by taking two cheese forms and hanging them over a branch, so they seem to be sitting on or straddling the branch.
