This Caciocavallo Cheese is aged for four months
The aging process gives this stringy Italian cheese a firmer texture and a bolder flavor.
Pair this cheese with cured salami or prosciutto on a charcuterie board.
Ragusano is a DOP Sicilian cheese that gets its name from Ragusa, located at the southern tip of the Italian island. The cow’s milk for this cheese comes from cows of the famed Iblei Mountains. The resulting cheese is a type of caciocavallo with a stringy texture and a slightly spicy flavor. This stretched curd cheese's name means "cheese on horseback" because it was traditionally made by taking two cheese forms and hanging them over a branch, so they seem to be sitting on or straddling the branch.
Enjoy this cheese from Southern Italy with a glass of bold red wine on a cheese board. Grate it over pasta dishes, salads, and even vegetable soups. Or use it as an alternative to provolone cheese in your favorite recipes. For a visually stunning appetizer, top crostini with Ragusano DOP cheese and fresh herbs, drizzle with extra virgin olive oil, and serve on a wooden board. This bulk size is ideal for delis and restaurants.
