A fresh type of cheese made from sheep's milk, this Italian pecorino is made in Agrigento in Western Sicily. Studded with pimento stuffed green olives and aged for a maximum of 15 days, this tangy, salty cheese has a pleasantly soft texture.
This soft cheese can be used in place of pecorino romano for a unique take on cacio e pepe. Or compare it to parmigiano reggiano on an Italian cheese board. Pair with your favorite glass of wine or a wheat beer.
