What is gemelli?

Gemelli is a spiral pasta common in Italian cuisine. Translated to “twins” in Italian, gemelli can appear to be two pasta noodles twisted around one another, but it is in fact a single S-shaped strand twisted into a spiral. You’ll find gemelli frequently in pasta salad, as well as in casserole bakes. 

What can I make with gemelli? 

Because of its shape, Gemelli makes a terrific pasta noodle for catching sauces. Try baking it in a pasta dish al forno with tomato sauce, ricotta cheese, and Italian sausage, or toss in a skillet with broccoli, chicken, and parmigiano reggiano. Gemelli is a great pasta variety for making cold pasta salad as well, and will absorb the flavor of dressings while still remaining tender.
