Manchego is a DOP cheese that can only be made from the milk of the Manchega sheep that live in the provinces of Albacete, Ciudad Real, Cuenca, and Toledo, which are all in the region of La Mancha. Between August and December, when the milk is at its fullest, the best cheese is made. Manchego keeps well and tastes great on its own, but when it's cooked, it adds a nutty, sweet flavor to a dish.
