Raspberry Vincotto by Gianni Calogiuri is first created by combining Malvasia and Negroamaro grapes into a vinegar that is aged in oak barrels for four years, allowing the flavors to evolve. A year before the aging process, raspberries and wine vinegar are joined to enhance the raspberry aroma of the vinegar, giving it its fruity flavor accent.
