Cornichons

What are cornichons?

A must-have on charcuterie boards and cheese boards, cornichons are those miniature pickles that make you wonder just how they got so small. Cornichons, or gherkins as the English say, come from a breed of cucumber that is pickled when only one to two inches long, effectively stunting the growth. The tiny gherkins are steeped in vinegar, salt, and savory herbs, giving them a more intense flavor than your average pickle. Serve cornichons with classic meat pâté and nutty cheeses on your next charcuterie board, or dice them to make a piquant relish for burgers, grilled chicken, and more.
