Originating from Liguria, Northern Italy, this organic artisan durum wheat pasta is short, thin and twisted. The center is a bit thicker than the ends which helps the pasta retain its texture once cooked, but what makes this such a classic and so loved is that the spirals from the twists are perfect vehicles for sauces which leads to more flavorful bites. It is traditionally served with basil pesto sauce, potatoes and green beans, but can also be served with various sauces including walnut pesto, creamy, and tomato based sauces.
