Four Generations of Sardinian Cheese
The Villecco family has been crafting quality cheese on the Italian island of Sardinia since the end of the nineteenth century. Over the course of four generations, the family has seen their Italian cheese evolve from a beloved local product to an international success. The cheesemakers branded themselves Central in 1974 and brought all of their small dairy centers around the island under one roof in Serrenti.
Types of Central Cheese
Sardinia is a land marked by a range of terrains, from the shores of the Mediterranean Sea all the way up to the mountains. Central’s range of Italian cheese is just as varied. The company produces semi soft cheeses and hard cheeses, including pecorino, goat, and ricotta cheese. The flavors range from sweet and traditional to chili pepper, truffle, wine, and black pepper. Grate Central cheese over pasta dishes, or use the grated cheese in the making of thick, creamy sauces. Enjoy Central pecorino cheese with your next cacio e pepe recipe!
