Traditionally, leftover burnt wheat is collected after the wheat fields are burned to clear the land, but in modern times, this smoky, rich flavor is achieved by toasting the wheat in an oven. The toasted grains give the pasta its dark earthy color and nutty flavor. As with the original orecchiette pasta, this is perfectly paired with rich, creamy and chunky sauces, and vegetables to be scooped up with every bite.
