Rougie's delectable mousse is made of duck foie gras, duck fat with Armagnac and Port, and 2% truffle. Prior to serving this mousse, warm up a knife with hot water before slicing to give it more of a smooth cute. Ideally foie gras should be cut into 1/3-inch slices. You may add fleur de sel and ground pepper, as well as an onion confit, fig jam, or balsamic glaze to your mousse. Chill before serving.
