Raspberry Vincotto by Gianni Calogiuri is first created by combining Malvasia and Negroamaro grapes into a vinegar that is aged in oak barrels for four years, allowing the flavors to evolve. A year before the aging process, raspberries and wine vinegar are joined to enhance the raspberry aroma of the vinegar, giving it its fruity flavor accent. Raspberry Vincotto is an excellent Italian vinegar for Italian recipes and dishes. This vinegar is well-paired with meats, fish, vegetables, meats, salads, and aged cheeses.
