Volpi Bresaola is a beef prosciutto that has been salt cured and air dried. Unlike most other cured meats, Bresaola has very little or no visible fat and is very lean. Bresaola should be cut into very thin slices. It is sweet and has a deep ruby red color. You can eat it plain, but you can make a unique style of carpaccio with it by drizzling it with high-quality extra virgin olive oil, fresh lemon, and finely ground cracked black pepper. It goes well with arugula and Parmigiano-Reggiano.
