Description
Bertozzi Parmigiano Reggiano is a traditional Italian cheese
This Parmigiano Reggiano is only made using milk from brown cows
Add grated to pizza, pasta, and salads in place of parmesan cheese.
Bertozzi produces this particular Parmigiano-Reggiano cheese according to ancient Italian tradition. During the Middle Ages, Parmigiano-Reggiano was only made with milk from brown cows, or “Bruna.” This is how Bertozzi makes their Solo di Bruna cheese today. Why? Because cow's milk from brown cows possesses more of a certain protein that makes this cheese exceptionally creamy and flavorful.
As a specialty food with a protected designation of origin, you can be certain that this skimmed milk Italian cheese is authentic. This type of cheese wedge is hard and perfect for grating over your favorite Italian recipes. Sometimes called the "King of Cheese," it will also make a delicious topping for pasta and pizza. Alternatively, you can add it to a charcuterie board with cured meats and fruit jams.
Use it as a substitute for grated parmesan or even as an alternative to pecorino Romano in a cacio e pepe dish. For a true sampling of Italian cuisine, contrast the strong, distinctive flavor of Parmigiano Reggiano DOP with the subtler taste of milder, creamy cheeses on a cheese board.
