Koon Chun Potassium Carbonate & Sodium Bi-Carbonate Solution, Lye Water is an alkaline substance that's used to give ramen noodles and mooncakes a unique texture. Lye water is also used to prepare traditional pretzels and bagel recipes.

Use this solution in noodle recipes to keep them more firm when adding them to soups. Add to mooncakes and similar baked goods to give them a delectable texture and rich, appetizing color.
