Enjoy this true Manchego cheese from Spain
Milk from the Manchega breed of sheep gives this Spanish cheese a buttery, mildly sweet flavor.
Serve this pale yellow cheese on a charcuterie board with fresh fruit, chorizo, and fuet.
Manchego is a DOP cheese that can only be made from the milk of the Manchega sheep that live in the provinces of Albacete, Ciudad Real, Cuenca, and Toledo, which are all in the region of La Mancha. Between August and December, when the milk is at its fullest, the best cheese is made. Manchego keeps well and tastes great on its own, but when it's cooked, it adds a nutty, sweet flavor to a dish.
Compare this type of cheese to Spanish cow's milk cheeses on a cheese board. Grate it over your favorite salad and pizza dishes. Or simply savor each bite with warm bread, olive oil, and a glass of wine.
