Vincotto Originale, literally translated as 'cooked wine', is derived from cooking pulped grape must from two distinct types of Italian grapes, Malvasia and Negroamaro. After cooking, the grape must is reduced to one-fifth of its original volume and left to age in oak barrels for up to four years, and it is only in the third year of aging that figs and wine vinegar are added to the grape mixture. The flavor is uniquely sweet and sour and is excellent drizzled over meats, sauces, and soups. It will also be ideal for desserts such as fruits, ice-cream and mascarpone cheese. Vincotto Originale is alcohol-free and has no colorings or preservatives.
