While it has a French name, Lou Bergier Pichin Cheese is an Italian cheese. It comes from the Piedmont region in Northern Italy, which borders France, and is made out of cow's milk. Unlike most other Italian cheeses, Lou Bergier Pichin Cheese is made with thistle flower and vegetable rennet, which gives it a more floral and earthy flavor. 

Its semi-soft, semi-firm texture and creaminess is not unlike that of Brie Cheese. This Italian cheese is aged for approximately 60 days. Best enjoyed when paired with a clean, crisp white wine or a medium-bodied, lightly fruity red wine.
