Unlike most other Italian cheeses, Lou Bergier Pichin Cheese is made with thistle flower and vegetable rennet, which gives it a more floral and earthy flavor.
Its semi-soft, semi-firm texture and creaminess is not unlike that of Brie Cheese. This Italian cheese is aged for approximately 60 days. Best enjoyed when paired with a clean, crisp white wine or a medium-bodied, lightly fruity red wine.
