Montasio DOP Cheese is one of the most famous and historic Italian cheeses. First produced by monks in the 13th century, Montasio DOP Cheese only comes from Friuli Venezia Giulia and the provinces of Belluno, Treviso, Padova and Venice. If Montasio does not come from these specific regions, it is not authentic Montasio DOP Cheese. Montasio DOP Cheese can be aged anywhere between two and 18 months. Fresh Montasio has a taste that is soft and delicate, while the more matured versions of the cheese such as Seasoned or Very Old Cheese is more aromatic and brings a slight heat.
