Ingredients
4 boneless, skinless chicken breasts, thinly sliced
3 tablespoons all-purpose flour
Salt and freshly ground black pepper, to taste

2 tablespoons olive oil
3 tablespoons unsalted butter, divided

2 garlic cloves, minced

½ cup chicken broth

¼ cup fresh lemon juice

2 tablespoons Sanniti Capers in Salt, rinsed and drained
1 lemon, thinly sliced
2 tablespoons fresh parsley, chopped
Directions
Prepare the capers: Rinse the Sanniti Capers thoroughly under cold water to remove excess salt. Drain and set aside.
Prepare the chicken: Season the chicken lightly with salt and black pepper, then coat each piece lightly with flour. Shake off any excess.
Cook the chicken: Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Cook the chicken for about 3–4 minutes per side, or until golden brown and cooked through. Transfer to a plate.
Make the sauce: Reduce the heat to medium. Add the garlic and cook for about 30 seconds. Pour in the chicken broth and lemon juice, scraping up the flavorful browned bits from the bottom of the skillet.
Add the capers: Stir in the rinsed Sanniti Capers and lemon slices. Simmer for 2–3 minutes, allowing the sauce to reduce slightly.
Finish the dish: Return the chicken to the skillet and add the remaining 2 tablespoons of butter. Spoon the lemon-caper sauce over the chicken and simmer for another 2 minutes.
Serve: Garnish with fresh parsley, additional lemon slices, and a few capers. Serve immediately.
