14 oz of penne pasta

2 tablespoons extra virgin oil

1 tablespoon of garlic minced

1 or 2 red chilli pepers

1 can (14oz) of tomatoes

¼ cup chopped parsley

salt to taste

peppercorn to taste

Grated parmesan cheese
Directions
Cook the pasta: Bring a large pot of salted water to a boil, add the pasta and cook accordin to the package instructions until al dente. Reserve about ½ cup of pasta cooking water, then drain the pasta.
Prepare the sauce: In a largeskillet or frying pan, heat the olive oil medium heat. Add the minced garlic and chopped chilli peppers. Saute for 1-2 minutes until the garlic is fragant and the chilli peppers being soften.
Add the tomatoes: Add the diced tomatoes to the skillet, along with a pinch of salt and pepercorn. Stir well to combine.
Simmer the sauce: reduce the heat to medium-low and let the sauce simmer gently for about 10-15 minutes, stirring occasionally, until it thickens sligtly. If the sauce becomes too tock you can add a splash of reserved pasta cooking water to loosen it up.
Toos with pasta: Once the sauce has reached your desired consistency, add the cooked pasta to the skillet. Toss well to coat the pasta evenly with the arrabbiata sauce. If needed, add a bit more pasta cooking water yo loosen the sauce.
Serve: Remove the skillet from the heat and sprinkle chopped parsley ovr the pasta. Taste amd adjust the seasoning with more salt and black pepper if necesary. Serve hot and garnished with grated parmesan cheese.
