2 1/2 cups all-purpose flour
1 cup (2 sticks) unsalted butter, cold and cut into small cubes

Prepare the Pie Crust
In a large bowl, combine the flour, salt, and sugar.
Add the cold butter cubes and use a pastry cutter or your hands to work the butter into the flour mixture until it resembles coarse crumbs.
Gradually add the ice water, one tablespoon at a time, and mix until the dough starts to come together.
Divide the dough into two equal parts, shape them into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Apple Filling
In a large bowl, toss the sliced apples with lemon juice.
Add the granulated sugar, brown sugar, cinnamon, nutmeg, allspice, salt, flour, cornstarch, and vanilla extract. Mix well to coat the apples evenly.
Assemble the Pie
Preheat your oven to 425°F (220°C).
On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie dish, allowing for some overhang.
