Ingredients
1 whole chicken, cut into pieces
-
2 tbsp jerk seasoning
-
1 tbsp soy sauce
-
1 tbsp vegetable oil
-
2 garlic cloves, minced
-
1 lime, juiced
-
Salt and pepper to taste
Directions
Marinate the Chicken
In a bowl, combine the jerk seasoning, soy sauce, vegetable oil, minced garlic, lime juice, salt, and pepper.
Rub the mixture all over the chicken pieces, ensuring they are well coated.
Cover the bowl with plastic wrap and marinate the chicken in the refrigerator for at least 2 hours, preferably overnight for best results.
Cook the Chicken
Preheat your grill to medium-high heat.
Remove the chicken from the marinade and shake off any excess.
Place the chicken pieces on the grill and cook, turning occasionally, until the chicken is cooked through and has a nice char, about 30-40 minutes. The internal temperature should reach 75°C (165°F).
Alternatively, you can cook the chicken in the oven. Preheat the oven to 200°C (400°F). Place the marinated chicken pieces on a baking sheet lined with foil. Bake for 35-45 minutes, turning once, until the chicken is cooked through and golden brown.
Serve
Let the chicken rest for a few minutes before serving.
Serve with rice and peas, coleslaw, or a fresh salad.
