RECIPE: How To Make Folios Parmesan Cheese Mushroom Risotto Bowl

Risotto is a classic Italian dish that is admired for its creamy texture and savory flavor. Generally, risotto is served in a dish as any normal meal would be, but this Lolito Foods recipe for Folios Parmesan Cheese Mushroom Risotto Bowl is a fun, modern twist on the traditional Italian dish.

Getting Started

First, crisp and shape the Folios Parmesan Cheese Wrap as directed on the packaging. Next, heat a medium-sized saucepan filled with 4 cups chicken broth (check out Epic Artisinal Bone Broth Home Style Savory Chicken) and 3 tablespoons dried and diced Porcini mushrooms. Keep heat low.

Cooking the Ingredients

In a large separate skillet, heat 2 tablespoons olive oil with one small chopped onion, one clove minced garlic, and 1 tablespoon butter. Sauté. When the ingredients become translucent, add 8 oz. chopped fresh Crimini mushrooms and risotto rice (check out Acquerello Carnaroli Rice or Campanini Vialone Nano Semifino Rice). Add ¼ cup dry white wine while stirring constantly.

Once the risotto rice has thoroughly absorbed the wine, add one ladle of your chicken broth to the skillet at a time until it is fully absorbed, stirring as you do so. Once all the broth is fully absorbed by the risotto rice, turn off the heat.

Finishing Touches

Finally, stir 3 tablespoons butter and ¼ cup grated Parmigiano Reggiano into your mushroom risotto recipe.Top with salt, pepper, and chopped parsley to taste, and enjoy your scrumptious mushroom risotto bowl!
