4 tablespoons Kyoto Shiro White Miso Paste
1 block (about 14 oz) firm tofu, cut into small cubes
1 cup sliced mushrooms
1 cup sliced green onions
1 cup chopped spinach or other leafy greens

1 tablespoon mirin (Japanese sweet rice wine) or a pinch of sugar (optional)
sheet nori (dried seaweed), cut into thin strips (optional)

Directions
Prepare the Broth
In a pot, bring the water to a gentle boil over medium heat.
Dissolve Miso Paste
Place the Kyoto Shiro White Miso Paste in a small bowl. Add a ladleful of hot water from the pot and whisk until the miso paste is fully dissolved.
Add Tofu and Vegetables
