What is Bresaola?
Bresaola is a type of air-dried, lightly salted Italian cured beef that has been aged for several months. The curing process, in a dry curing chamber, produces a dark red meat that is almost purple in color and the drying process creates a unique flavor. It is packed in a vacuum bag.
