Types of Mussini Balsamic Vinegar
There are very specific qualifications for balsamic vinegar dressing to be considered an authentic product. Italy’s Ministry of Agriculture has strict rules about what can be certified P.G.I. (Protected Geographical Indication) and even more prestigious, P.D.O. (Protected Designation of Origin). Italian balsamic vinegar of Modena can be made from a variety of grapes, such as Sangiovese, Lambrusco, and Trebbiano. P.G.I. balsamic must be a mixture of at least 20 percent cooked grape must, 10% concentrated must and wine vinegar, and 10 years aged balsamic vinegar.
