Sanniti Saba Cooked Grape Must is the precursor to balsamic vinegar. The main difference between the two is that saba is not aged. It has a slight acidity with a very sweet flavor, and its texture is thick and syrupy. Sanniti Saba Cooked Grape Must is produced and bottled by the Bellei company in Italy. They have been producing balsamic vinegar since the 1800s, and while they have grown much in the last few generations, they still maintain a family character and caring approach to making the best Italian balsamic they can.
