Telesforo Fini, a shop owner in Modena, Italy, sold a variety of specialty foods including his family’s own bottled balsamic vinegar recipe. It was ultimately his daughter, Giulietta, who took on the task of refining the recipe to transform it into the world-renowned balsamic Fini is today. D.O.P. & I.G.P. Aged Balsamic Vinegar
Today, Fini produces two types of aged balsamic vinegar: D.O.P.-certified and I.G.P.-certified. The former is made of pure grape must that is left to ferment for a minimum of 25 years to be considered traditionally aged. Their I.G.P. balsamic vinegar of Modena is made of wine vinegar and grape must that is aged for at least 10 years. To achieve the most robust and noble flavor, Fini uses wooden casks that date back to the 1700’s!
I.G.P. Balsamic Glaze
Fini also makes a balsamic glaze that is made with 90% I.G.P. balsamic vinegar. It maintains the vinegar’s beautiful, classic taste but offers more viscosity. It is just the right thickness for decorating plates for a stunning presentation. Recently, Fini has even begun producing balsamic glaze with additional flavors including truffle, dijon mustard, and soy sauce!
