This DOP Cheese is one of the most famous and historic Italian cheeses. It was first produced by monks in the 13th century from cow's milk, and has remained a treasured part of Italy's cuisine ever since. Today, Montasio DOP Cheese only comes from Friuli Venezia Giulia and the provinces of Belluno, Treviso, Padova, and Venice. If this cheese does not come from a production area in one of these specific regions, it is not authentic and will not be certified by the DOP, an Italian food agency.
Montasio Cheese can be aged anywhere between two and 18 months. As a fresh cheese, this masterpiece has a taste that is both soft and delicate. The more matured versions of the semi-hard cheese such as Seasoned or Very Old Cheese is more aromatic and brings a slight heat that makes it a memorable addition to a cheese board.
