When Miles Thomas was bartending in Seattle, he found himself longing for more exciting, flavorful cocktail bitters. Instead of waiting for the bitters of his dreams to come along, he became determined to do the research himself and create his own. Thomas began playing with herbs and extraction methods, trying to find what would yield the best, most potent taste. In 2008, he finally learned enough to brew the cocktail bitters he always wanted, and launched Scrappy’s Bitters.
