Alice Cerutti, the head honcho at Cascina Oschiena in Italy's Piedmont area, is a pioneer in the rice industry and a staunch advocate for biodiversity. In addition to farro, Classic Arborio, and Classic Carnaroli, they also raise a variety of ancient grains on their 25 hectare nature preserve (where the migratory bird Blacktailed Godwit that inspired their logo can often be found). They use a gravity-based system to channel water from neighboring mountains to flood their fields and replenish the groundwater, a technique that dates back centuries and is crucial to the traditional way of rice growing. Their traditional rice is mildly milled and never aged. The ECORice project includes Cascina Oschiena. Alice and Oschiena see themselves as environmental stewards because of the rice they grow.
