Giunco Amatriciano is made of Italian pasteurized sheep milk processed within 24 hours of milking. The cheese was processed by following an old fashion shepherd tradition where it has a golden grooved rind while aging in a basket. It’s flavor accentuates with light sparkling white wine or a soft rose. Semi-hard paste, slightly glazed, straw-yellow color and refined perfume.
