While white peppercorns and black peppercorns come from the same plant, they have different colors and tasting profiles because of when they were picked. Black peppercorns are picked from the plant when they are not yet ripe, whereas white peppercorns are picked when fully ripened. White pepper has a slightly earthier tone to its heat.
