1 cup polenta

4 cups water

2 tablespoons butter

1/2 cup grated Parmesan cheese
500g (about 1 pound) mixed mushrooms

2 cloves garlic, minced

2 tablespoons olive oil
2 tablespoons butter
Salt and pepper to taste
2 tablespoons chopped fresh parsley

Directions
Prepare the polenta
In a large saucepan, bring 4 cups of water to a boil.
Gradually whisk in the polenta, stirring constantly.
Reduce the heat to low and continue to cook, stirring frequently, until the polenta is thick and creamy, about 30 minutes.
Stir in the butter and grated Parmesan cheese until melted and well combined. Season with salt to taste.
Prepare the mushrooms
Heat the olive oil and butter in a large skillet over medium heat.
Add the minced garlic and sauté for 1 minute until fragrant.
Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they are golden brown and tender, about 8-10 minutes.
Season with salt and pepper to taste.
Stir in the chopped parsley and remove from heat.
Serve
Spoon the creamy polenta onto serving plates or bowls.
Top with the sautéed mushrooms.
Garnish with additional grated Parmesan cheese and chopped parsley, if desired.
