Ingredients

8 oz Beretta Pancetta, diced

1lb pasta (penne, fusilli, or orecchiette)
2 cups fresh arugula
1 cup cherry tomatoes, halved

Juice and zest of 1 lemon

2 tbsp extra virgin olive oil

1/2 cup grated Parmigiano Reggiano

Salt and black pepper, to taste
Directions
Cook the pasta according to package directions until al dente.
While the pasta cooks, sauté the pancetta in a large skillet until crispy and golden.
Add the cherry tomatoes and cook for 2 minutes.
Stir in the lemon juice and lemon zest.
Add the drained pasta and toss to combine.
Remove from heat and fold in the arugula until slightly wilted.
Finish with Parmigiano Reggiano, black pepper, and a drizzle of olive oil.
