½ cup San Marzano tomato sauce
6 oz fresh mozzarella (torn into pieces)

1 cup fresh arugula

1 tablespoon extra virgin olive oil

½ teaspoon black pepper

Prepare the Dough

Cover with plastic wrap and let the dough rise for 6-8 hours (or overnight in the fridge).
Shape & Preheat
Preheat oven to 500°F (260°C) with a pizza stone inside.
Divide the dough into two equal balls. Let rest for 30 minutes.
On a floured surface, stretch the dough into a 12-inch circle by hand.
Assemble the Pizza

Transfer to the preheated pizza stone or a baking sheet.
Bake
