Aged Italian Rice
Acquerello is an exceptional Italian rice company because of the immense care and attention to detail put forward by the Rondolino family, who have been farming rice since 1935. Risotto rice goes through a 20-step quality assurance process before it can earn the right to be called Acquerello. Every rice grain that reaches your dinner table has been aged for at least one year in temperature controlled silos. The aging process stabilizes the starch, which enhances the quality, texture, and taste.
The Only 7-Year Rice
All Acquerello rice is aged for at least one year, but only 1% of the yield is aged for a total of seven years. This is a very special reserve for multiple reasons, including the fact that it is the only 7-year rice in the world! White rice aged for this long develops a slightly darker color, firmer texture, and higher absorption rate. A delectable alternative to arborio rice, Acquerello's carnaroli rice takes a little longer to cook, but the result is a risotto rice that can absorb the most amount of liquid and flavor.
Authentic Italian Rice
Grown in Italian soil, Acquerello's rice has unique flavor notes that set it apart from similar grains from other parts of the world. All of Acquerello's rice comes from the Colombara estate in the city of Vercelli in Piedmont. If you want to prepare delicious traditional Italian recipes, there's no substitute for real Italian rice.
Enhanced Rice Nutrition
This Italian rice company literally has production down to a science. Their exclusive, patented process for restoring the rice germ to the grains gives them greater nutritional value similar to brown rice. Other companies don’t do this, so you miss out on key vitamins and minerals. The way Acquerello whitens their rice is also unique: They use a helix to gently rotate the grains so that they rub up against each other, polishing without leaving scratches or fractures. Because the risotto rice remains intact, the final dish will be more consistent. They do all of this so you can enjoy the tastiest, richest, healthiest rice!
Carnaroli Acquerello: More Than Risotto
While aged carnaroli rice is great for risotto, it can also be used to prepare other rice dishes from Italy. Since it soaks up liquids and flavor, this rice is an excellent choice for sweet rice pudding. Try it in a savory rice pilaf side dish. Or simply serve leftover rice with meat, seafood, and vegetable recipes.
