Aged Italian Rice
Acquerello is an exceptional Italian rice company because of the immense care and attention to detail put forward by the Rondolino family, who have been farming rice since 1935. Risotto rice goes through a 20-step quality assurance process before it can earn the right to be called Acquerello. Every rice grain that reaches your dinner table has been aged for at least one year in temperature controlled silos. The aging process stabilizes the starch, which enhances the quality, texture, and taste.
The Only 7-Year Rice
All Acquerello rice is aged for at least one year, but only 1% of the yield is aged for a total of seven years. This is a very special reserve for multiple reasons, including the fact that it is the only 7-year rice in the world! White rice aged for this long develops a slightly darker color, firmer texture, and higher absorption rate. A delectable alternative to arborio rice, Acquerello's carnaroli rice takes a little longer to cook, but the result is a risotto rice that can absorb the most amount of liquid and flavor.

Enhanced Rice Nutrition
