P.G.I. Burgundy Mustard
Edmond Fallot’s Burgundy Mustard was first recognized in 1903 when it was given an award from the City of Paris at the Great International Exhibition. It was only recently, though, in 2009 that the mustard brand’s flagship product was officially certified P.G.I. (Protected Geographical Indication). Made strictly with seeds and wine produced locally, their Burgundy Mustard is quite literally one of a kind, and its superior quality is recognized by the French government.
Other Types of Mustard by Edmond Fallot
What gives French mustard its unique identity is its combination of brassica seeds, verjuice (vinegar, water, salt), flavors and seasonings. While Edmond Fallot is most famous for their Burgundy Mustard, the company also produces other types of mustard, including Dijon mustard, and unique flavor offerings like walnut, honey, basil, balsamic, and green peppercorn. Supermarket Italy offers Edmond Fallot Dijon Mustard as well as their dijon with tarragon. For their dijon, the brand uses an especially bold mustard seed known as Brassica Juncea—more commonly known as brown mustard or Chinese mustard.
